Wonderful Wednesday #8 - Catfish Express

I like food.  Period.  But what I like even better is good food.  What's the best though?  Good food with great service - and that's what you get at Catfish Express here in Marshall.
Catfish is a staple here in the South - it's part of the 7 food groups:  dairy, meat, fruit & vegetables, grains, barbecue, iced tea, and catfish.  Randy & Betsy Cox took over the restaurant side of the business in 2009 after running the catering side for many years.  Betsy has been working at the restaurant since it opened in 1982!   They run a tight ship as evidenced by the cleanliness of the kitchen and dining room and the friendly service.  They only use U.S. farm raised catfish which is fantastic, their prices are more than reasonable, and the food is yummy.  They have a few tricks up their sleeve which set them apart from the other family style eateries.  For instance, platters like the "Swamp Bucket" which will get you catfish, crawfish, alligator and frog legs.  Mmmmmm.... 
If you have read previous Wonderful Wednesday posts, you realize that not only do I like a business or organization, but the people behind it.  Randy and Betsy are no different.  They are extremely generous and kind people who support their community in all sorts of ways.  They support Veterans causes, youth baseball teams, and tons of other local charitable outlets (although you may never know it because they are also a very humble couple.)
