Menu Plan Monday
Because this week it is just Engineer and myself eating supper (Diva has VBS all week) we will be eating slightly differently. I have decided to let go of the Taste of Homes Prize Winning Recipes cookbook that I used last week. This week I will be using The Great Green Cookbook which is a vegetarian cookbook that I bought while in England since so many of our friends were vegetarians there.
Monday - Roasted Vegetables with Pesto (pesto that came from the out of control basil plant in the backyard)
*Update* Pretty good - might make it again as a side dish
Tuesday - Classic Tarte Au Fromage w/ Tomato Coulis & Salad (tomatoes, basil, and salad from the garden)
*Update* Since Engineer had 3 helpings of the tarte & coulis, I'm going to say that this recipe is a keeper. Let's be honest though, pastry, cheese, basil, & tomatoes was there really even a margin for error?
Wednesday - Pumpkin Soup w/ Gruyere and Fennel & French Bean Salad w/ Croutons
Thursday - Fresh Tomato & Herb Tarts w/ Dill Creme Fraiche Sauce, Grilled Brie w/ Apricots and Summer Potato Salad w/Dill
*Update* Engineer and I agreed that all of the recipes were so-so. The Brie & Apricot one could probably be used again as part of a selection of canapes but as for the others, they weren't worth the effort although the tomato tart looked beautiful.
Friday - Out to eat
