Menu Plan Monday
Last week's cookbook was the Not Your Mother's Slow Cooker Cookbook* and while it had some interesting recipes, none of them were anything so spectacular that I would make them again. I guess the charro beans came the closest but even they weren't brilliant. So in an unprecedented move, I am going to give it another shot though and make another week's worth of crock pot meals.
There are several reasons for this:
It is a huge cookbook so maybe we just managed to cook the five items that weren't amazing.
After yesterday's timely Crock Pot Cooking Class that I was privileged to take part in, I am pumped up about using this little kitchen gem.
This is the week before Diva goes back to school and I am loving the idea of perfecting breakfast from the crock pot and having leftover meals frozen for busy nights.
Monday - Italian Lentil Soup
Tuesday - Creamy Penne with Mushroom & Tuna Sauce
Wednesday - Parmesan Risotto w/Peas
Thursday - Salsa Chili w/Cilantro Cream
Friday - Rigatoni and Sausage
I did try making oatmeal (I used 1/2 oatmeal & 1/2 quinoa flakes) in the crock pot so it would ready in the morning and it worked fine. Engineer liked having a hot breakfast in the morning. This week I am hoping to try out granola in the crock pot if I get the chance.
