Menu Plan Monday

Happy Valentine's Day!

This past weekend, Engineer and I went to a Sweetheart dinner and dance sponsored by a local church.  A couple of weeks ago I got a phone call from someone who said that a pair of tickets were bought for us but the buyer wanted to remain anonymous.  How mysterious!  We had a wonderful time and although that anonymous person will be receiving a handwritten note from me, I would like to say a very public thank you as well...just in case they are reading.

We also visited Engineer's Grandmother for her birthday and went to a fundraiser chili cook off/talent show in which Diva performed.  This was her first solo performance and it did her  applause glutton performer mother proud. 

This week's extraneous activities include me chaperoning Diva's class at their Valentine's Day Bowling Party (what was I thinking?!)  As well as my once monthly insane Wednesday whereby all of the various associations I belong to fall on the same day and it takes the precision of a bloomin' Blue Angels pilot to conduct the day's goings on.  Diva gets the next installment of her braces (the lip bumper was two weeks ago and this is the dreaded expander.)   And there has been talk of going to a concert or two but nothing has been confirmed as of yet.

So last week's meals were good.  The rice recipe from the Rachel Ray book was okay but nothing special.  The best thing was the onion soup.  I didn't have any beef broth or provolone but I did have turkey broth and pepper jack and they worked just fine. 

We are still managing the Great Freezer Clean-Out 2011 and probably will be for some time.  One thing that will be totally new is the fresh smoked beef/goat mixture that our farmer friends bestowed upon us.  We are very much looking forward to that.

Monday - Lamb Chops, Twice Baked Potatoes, Green Bean Casserole, and Chocolate SOMETHING...
Tuesday - Dinner with Neighbors most likely Chili Dogs, Veggie Sticks, & Chips
Wednesday - Cabrito Tacos, Rice, & Salad
Thursday - Potato Soup
Friday - Date Night
