Recipe Using Brookshire's Ad
Here at the Little Pink House, we love mango. It is one of our favorite fruits and we are always happy to see it go on sale.
Last week we used pork three ways how about we try using mango in a couple of ways this week.
Besides eating it straight, this is my favorite way to eat it because it is so simple but healthy, colorful, and packs a serious flavor punch.
2 Mangoes, cubed
Cilantro, chopped
Scallions, chopped (you could use chives)
1 Cucumber, peeled, seeded, and chopped
1 Red Pepper, chopped
1 Jalapeno, chopped
Lime Juice
Salt to taste
Mix everything together and let it sit for a couple of hours.
Mango, chopped
2/3c. Chicken Stock
Lime Juice
Chili, chopped or juice from jalapenos or Tabasco to taste
Stir everything together in a saucepan. Heat on the stove and cook for around 10 minutes. Set aside until ready to mix in with stir fry.
