Menu Plan Monday
Well we had a better week last week. Thank you Lord for that!
We even got to see Thrifty Texas Penny and her family for a visit at the park. It's always nice to catch up with friends.
This weekend was the annual Fire Ant Festival in Marshall. Yes, I'm serious. We do actually have a whole festival centered on the bane of gardeners and barefoot children. Ironically, it is often sponsored by pest control companies.
The Fire Ant Festival kicks off the holiday season in Marshall. It coincides with Jefferson's Boo Rally motorcycle ride for burn victims. Next will be all of the fall festivities including Trunk or Treat on the Square. That will be followed shortly after by Thanksgiving and the kick-off of the Wonderland of Lights. I love this time of year - the season of parties and festivals and concerts and relationships and food.
Sandwiched between Diva being out of school on Monday and ending with a birthday party and Supper Club Saturday, we have a fairly slow week. We need to appreciate it now since all too soon, we will be faced with the wonderfully hectic holiday season.
Monday - Enchiladas, Rice, & Beans (I didn't get to this last week)
Tuesday - Salmon & Broccoli Alfredo
Wednesday - Frito Pie
Thursday - Red Beans and Rice & Chard
Friday - Date Night

Stopping by via MPM! Love the menu you've got for the week. The Salmon and broccoli alfredo sounds really lovely. What is Frito Pie? I've heard of it before but have never actually had it.

Cut open 4 single serving bags of Fritos
Pour hot chili straight into the bag of Fritos
Sprinkle cheddar cheese on top of chili
Sprinkle chopped onions over the cheese
Eat with a plastic fork
This is unhealthy comfort food at its finest. :)
