What's Cooking?
I've have done quite a bit of cooking lately but nothing out of the ordinary until this past week.
I roasted coffee beans
and made yogurt
but my favorite thing that I made this week was peppermint buttercream icing.
Iam in love with could swim in really like peppermint so this is right up my alley. Where have you been all of my life peppermint buttercream?
For Diva's piano group lesson and the children's program at church, I made mini brownie cups and frosted them with this icing. As a gift to an elderly gentleman, I made mini chocolate chunk cookies and sandwiched them together with the icing. Yum-me-o-my-o!
3c. Powdered Sugar
2 sticks butter (I never said this was healthy)
1 tsp. vanilla
1 Tbs. Heavy Cream
Peppermint Candies, crushed-to-smitherines (I did that in the food processor)
Cream sugar and butter on a low speed. Once it's blended, beat at medium speed for about 3-4 minutes. Add vanilla and cream and beat for one more minute. Reduce speed to low and incorporate the smitherines of peppermints. Spread on cookies, cakes, or brownies. Try to resist hiding in a corner with the bowl of frosting and a spoon.

ReplyDeleteOh, my! I love peppermint, too, so I will have to try this on brownies. Yum! I thought I was about done with my holiday baking since I'm expecting a baby this week, but I may just have to make time for this. I just need to get some peppermints.
