Menu Plan
Happy New Year!
We have our annual New Year's Day come & go party which ends the holiday season for us. So Monday will be spent taking down decorations and getting ourselves back into the mindset for work and school.
After a fantastic relaxed week of having both Diva and Engineer home, they are both back to their regularly scheduled programs by Tuesday.
I have joined with some talented bloggers who have all taken up a Boost Your Budget Pantry Challenge for the month of January. Each participating person has a different goal tailored to their needs. Engineer and I had already discussed the need for some belt tightening in 2012 when this challenge opportunity came about. With that in mind, this is what we will be eating this week (some real stick to your ribs hearty yumminess):
Sunday - New Year's Party Food
Monday - Sausage (breakfast), Biscuits & Gravy, and Broiled Grapefruit
Tuesday - Mac & Cheese, Cabbage & Sausage (link)
Wednesday - Crock Pot Chili & Cornbread Waffles
Thursday - Salad Sampler - Pasta, Green, Couscous, & Sauerkraut
Friday - Date Night - Orange Glazed Tilapia, Stir Fry Veg, and Jasmine Rice
Saturday - Leftovers (of which there will be many)

Thanks for stopping by Ms. Kelli! I menu plan according to my budget that month actually so there is no one way that I do it. Currently though, I am participating in a monthly pantry challenge so my menu planning strategy is taking what I've got in the fridge, freezer, and pantry and turning it into dinner. :)

Howdy Ms. Giada's Mama! Those cornbread waffles are fantastic with any chili and I have yet to have a batch that sticks to my waffle maker. Thanks for stopping by!
