Menu Plan
Technically, we should be in the last 3 days of the pantry challenge; however, realistically, we will continue down this path until I can see the light at the end of the tunnel...or at least the bottom of my freezer.
Here's what we will be eating this week:
Sunday - Venison Chili & Cornbread Waffles
Monday - Harvest Ham Bake & Hash Brown Turnips (both from the 1979 Southern Living Annual Recipes)
Tuesday - Rice Stuffed Peppers (from 1980 SL Annual Recipes) & Mashed Sweet Potatoes
Wednesday - Chicken Tagine & Couscous w/Peas & Mint
Thursday - Enchiladas, Rice, & Beans
Friday - Date Night
Saturday - Leftovers

I did a mini pantry challenge for just a couple weeks, and realize I probably need to stretch it out a bit longer. I might try the Chicken Tangine next week.
