April will be all about casseroles; I love casseroles! They are the perfect dish to make ahead and freeze. My little brother used to call me the "Casserole Queen" which is much better than "Stupid Head" or "Monkey Face" or some other kid brother-y name for me.

I especially love breakfast casseroles because they are so forgiving and versatile.  I have contributed a recipe for a French Toast Casserole that I make.
