Menu Plan Pantry Challenge - Week 24

We celebrated Diva's 11th birthday party yesterday at Spy Academy HQ (a.k.a. our church).

The cadets were processed and divided into F.B.I. and C.I.A. where they had to go through training in the art of espionage.  They had to:  relay correct intel without verbal communication, become masters of disguise and perform a dead drop, problem solve using the parameters given, decipher codes, be aware of their surroundings in order to script that information, and of course had to take part in laser avoidance and marksmanship training.

It was such fun to be a part of and Diva's friends are a great group of kids who are up for anything (thank goodness or else it would have been a loooong afternoon).

All of last week was taken up with the detail work for the party so my canning is a little behind as is my housework...ugh...

Today is catch-up day.

This week, starts my summer fun with the Boys & Girls Club.  I am team teaching a class on music and singing so that should be great fun and I am very much looking forward to it.

Does anyone else feel like summer is actually busier than the school year?  I figure it's because the schedule is the same all school year long whereas in the summer it is constantly changing with one-off art days and summer camps and swimming lessons and book club meetings and various VBSes and the list goes on and on.

Here is what I am going to attempt to make for supper this week but who knows, it may end up being a total PB&J week.  Have a great week y'all!

Sunday - Sweet Potato Surprise Casserole, Greens, and Peas Seasoned w/Homemade Summer Sausage
Monday - Southern Creamed Turkey Casserole over Sweet Potato Cornbread & Salad
Tuesday - Spanakopita & Greek Salad (carried over from last week)
Wednesday - Mac & Cheese and Sausage & Cabbage
Thursday - Beef Stew (still carried over from weeks ago I just can't seem to get it made)
Friday - Date Night
Saturday - Leftovers

This is part of Menu Plan Monday.
