Menu 2013 - Week 7


Last week I mentioned that I was going to need prayer for this major undertaking on which I was about to embark.

Here's the deal:

Our dear friends' son has recently been added to the heart transplant list.  The child is 10.  Ten.  That's all.

In order to help shoulder the burden of transplant related costs, they have developed a relationship with the national fundraising charity COTA (Children's Organ Transplant Association.)
I said national.
That means there needs to be a local team in place to assist in fundraising and they asked me to head-up that team.

That is huge y'all.

I didn't make the decision to accept lightly.  In fact, life was fraught with many sleepless nights over the span of a week or so because I didn't want to fail.
Failure could mean life or death.
I cannot fail.

I cried and fretted and oscillated between saying yes and saying no.

There were 1,000 reasons why I shouldn't/wouldn't/couldn't accept that position.
But, there was one really good reason why I should - the love I have for their precious family.

So on Valentine's Day while everyone is thinking of their sweetheart, please take a moment and think of his sweet heart.

His sweet broken heart.

We will be launching the COTA campaign in honor of Anthony Herman asking for $1.40 on the 14th with "Anything for Anthony" as our battle cry.

And, as we will be fairly busy with the launch of this campaign, I am suspending eMeals again for another week.  After all, this is why I cook and freeze meals ahead of time, right?

Sunday - Mexican Beans & Cornbread
Monday - Beef & Eggplant Stroganoff over Rice w/ Bok Choi
Tuesday - Pancakes (for Lent) Bacon & Stewed Apples
Wednesday - Spaghetti, Garlic Bread, & Salad
Thursday - Date Night - Launch of $1.40 on the 14th COTA in honor of Anthony Herman campaign
Friday - Pasta alla Norma
Saturday - Leftovers
