Perfectly Practical #206 - Good Tomatoes

I was sent samples in order to facilitate my review.  All opinions and delicious sandwiches are my own.

You know it's going to be a good day when you get an e-mail from a company asking you if you'd like to try some new flavors of their products.  Especially when that company makes products that you use regularly, like Red Gold canned tomatoes.

When I posted the recipe for my much requested hot sauce, I mentioned that you need to use good tomatoes.

Inferior tomatoes can taste metallic, or bitter, or sour.  Trust me when I say that all tomatoes are not canned equally.  Good tomatoes, like Red Gold brand tomatoes, can make or break a recipe.  That is the voice of experience speaking y'all.

Fun fact:  Did you know that the powerful antioxidant lycopene naturally found in tomatoes is actually increased by the canning process?

To promote their new flavors, Red Gold has launched a "How do you aioli?" Facebook contest to show everyone how easy it is to do a little "tjuzsing" to your favorite dishes.

Take a BLT for instance.

Instead of slathering on plain ol' mayo, I mixed the lime & cilantro variety tomatoes with fat free yogurt.  It made a great twist to the average BLT.

Red Gold Healthier BLT

Whole Wheat Bread
Red Gold Tomatoes w/Lime Juice & Cilantro
Fat Free Plain Yogurt (or you could use low-fat mayo)
Turkey Bacon, Baked
Prepared Pico de Gallo (or you could make your own)
Baby Spinach

Toast some bread on both sides.
Mix 1/2 can of tomatoes with 1/4 c. yogurt and spread mixture on one side of bread.
Spoon pico over the tomato mixture.
Lay bacon over pico.
Put spinach on top of bacon and slap the lid on that sandwich!  It's done in no time flat.

So?...How do you aioli?

  1. The quality of tomatoes is so important! I'm so sad this year that I don't get to have a garden with fresh ones. Thanks for the canned recommendation!
