Lentil Soup



Legumes (other than baked beans) are not traditionally associated with Independence Day fayre.

And as for having lentils at your July 4th party, fuhgeddabowdit.

But here's the thing (and there's always a thing) so many people are going vegetarian, vegan, or having a more plant-based diet in general, that there is actually a need to cater for the non-meat-eaters.

These lentils are so easy and good that even the most carnivorous among us will enjoy with gusto.

When I say easy, I mean chop some stuff, dump in stuff, slap a lid on the pot, and leave it until you are ready to fool with it...THAT easy.

Make you some cornbread to sop up the juice and maybe serve with a little jalapeno relish.  Enjoy and have a happy Independence Day!

Lentil Soup

1lb. bag of Lentils
2-3 good sized Carrots, chopped
1 med. Onion, diced
2-3 good sized stalks of Celery, chopped
1/2 of a 2.75oz. jar of Roasted Garlic Seasoning
8 -10 cups water
1 can diced Tomatoes

Dump everything in a Dutch oven and stir.
Bring up to a boil.
Reduce the heat down to low and leave it on the stove, in the oven, or in the crock pot most of the day (6 or 7 hours.)
Stir periodically and add water if the lentils look a little dry.

    1. We like legumes in any form. Give us a bowl full of beans or lentils and some cornbread and we are happy. :)
